These strawberry cake mix cookies are packed with sweet strawberry flavor and boast a beautiful pink hue. Making strawberry cookies from cake mix and gelatin is incredibly simple, perfect for a last-minute treat. They’re great for Valentine’s Day, Easter, baby showers, or even Christmas with a green drizzle!

- 1 box (15.25 oz) white cake mix (or Pillsbury strawberry cake mix)
- 1 small box (3 oz) strawberry Jell-O
- 1/2 cup butter, softened
- 4 oz cream cheese, softened
- 1 large egg
- 1 cup white chocolate chips (for drizzle or mix-in)
Instructions
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- In a large bowl, mix cake mix, Jell-O, butter, cream cheese, and egg using a hand mixer on medium speed until well combined.
- Scoop tablespoon-sized balls of dough, place them on an ungreased baking sheet, and slightly flatten each one.
- Bake for 12-14 minutes, or until edges are set.
- (Optional) For perfectly round cookies, use a mason jar lid or cookie cutter to shape them while they’re still warm. Transfer to a wire rack to cool completely.
- (Optional) Melt white chocolate chips in the microwave on 50% power, stirring every 30 seconds. Transfer to a zip-top bag, snip a small corner, and drizzle over cooled cookies.
- Let the drizzle set before stacking or serving. Enjoy!
Notes
Want to skip the drizzle? Simply fold the white chocolate chips into the dough. Add extra flavor with vanilla extract, lemon zest, or sprinkles. Make gluten-free by using a gluten-free cake mix. Customize for holidays by changing drizzle colors or adding themed sprinkles.
