  • 2 cups shredded cooked chicken (about 2 medium chicken breasts)
  • 1/2 block cream cheese (or substitute with sour cream for a tangy twist)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup black beans, drained and rinsed
  • 1/2 cup sliced olives (optional)
  • 1 jalapeño, minced (use more for extra heat)
  • 2 tablespoons taco seasoning

Instructions

  1. Dice the cheddar cheese blocks into large cubes.
  2. If using fresh chicken, cook and shred it beforehand.
  3. Add all ingredients to your slow cooker.
  4. Cover and cook on high for 1 to 1.5 hours, stirring occasionally, until the cheese is fully melted and creamy.
  5. For a smoother texture, add a splash of milk or more cream cheese.
