  • 1.5 lb chicken breasts (boneless, skinless)
  • 1 red bell pepper (diced)
  • ½ large yellow onion (diced)
  • 2 garlic cloves (chopped)
  • ½ cup peanut butter (natural, creamy, or crunchy)
  • ½ cup chicken broth
  • ¼ cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon chili garlic paste
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro (chopped, plus extra for garnish)

Instructions

  1. Dice the red bell pepper, yellow onion, and garlic, then add them to the bottom of your slow cooker.
  2. Lay the boneless, skinless chicken breasts on top of the vegetables.
  3. In a medium mixing bowl, whisk together peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth.
  4. Pour the peanut sauce over the chicken in the slow cooker, ensuring even coating.
  5. Cover and cook on HIGH for 2-3 hours or LOW for 4-5 hours until the chicken is tender and fully cooked.
  6. Stir in lime juice and cilantro, then shred the chicken and mix well with the sauce.
  7. Serve over steamed rice, rice noodles, or cauliflower rice.
  8. Garnish with extra cilantro and chopped peanuts if desired.

Notes

For extra creaminess, stir in a splash of coconut milk at the end of cooking. Add more chili garlic paste or sriracha for extra spice.
