- ¼ cup soy sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 teaspoon chili garlic paste
- 1 tablespoon lime juice
- 2 tablespoons cilantro (chopped, plus extra for garnish)
Instructions
- Dice the red bell pepper, yellow onion, and garlic, then add them to the bottom of your slow cooker.
- Lay the boneless, skinless chicken breasts on top of the vegetables.
- In a medium mixing bowl, whisk together peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth.
- Pour the peanut sauce over the chicken in the slow cooker, ensuring even coating.
- Cover and cook on HIGH for 2-3 hours or LOW for 4-5 hours until the chicken is tender and fully cooked.
- Stir in lime juice and cilantro, then shred the chicken and mix well with the sauce.
- Serve over steamed rice, rice noodles, or cauliflower rice.
- Garnish with extra cilantro and chopped peanuts if desired.
Notes
For extra creaminess, stir in a splash of coconut milk at the end of cooking. Add more chili garlic paste or sriracha for extra spice.
