- 2 ½ lbs. boneless, skinless chicken breasts
- 1 Tbsp. Italian seasoning
- 1 tsp. salt
- ½ tsp. pepper
- 1 Tbsp. minced garlic
- 1 small white onion, sliced
- 1 (14.5 oz) can diced tomatoes, undrained
- ½ cup balsamic vinegar
- ½ cup chicken stock (or broth)
Instructions
- Place the chicken breasts into the slow cooker.
- Sprinkle Italian seasoning, salt, and pepper over the chicken.
- Pour in the minced garlic, sliced onions, diced tomatoes, balsamic vinegar, and chicken stock.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until the chicken is tender and fully cooked.
- Serve whole or shredded over pasta, rice, or vegetables. Garnish with fresh parsley, basil, or parmesan cheese for extra flavor!
Notes
