- 1 lb ground Italian sausage (mild or hot)
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 3 tbsp flour (for thickening)
- 1 tsp dried basil
- ½ tsp oregano
- 1 pinch cayenne pepper (optional)
- 1 tsp hot sauce
- ½ tsp mustard powder
- ¼ tsp black pepper
- 1 pinch red pepper flakes (for a little heat)
- 1 cup heavy cream
- 5 cups chicken broth
- 2 cups kale, chopped (or substitute with spinach)
- 2 cups cheese-filled tortellini (refrigerated or frozen)
- Salt to taste
Instructions
- Cook the sausage with onions over medium-high heat until browned. Drain excess grease.
- Add garlic and cook for 1 minute until fragrant.
- Sprinkle flour over the sausage mixture and stir. Cook for 1-2 minutes.
- Season the soup by adding basil, oregano, cayenne, hot sauce, mustard powder, black pepper, and red pepper flakes. Stir well.
- Pour in chicken broth and slowly add heavy cream while stirring.
- Bring to a simmer, then add kale and tortellini. Cook for 3-5 minutes.
- Taste and adjust salt if needed. Serve hot, garnished with extra red pepper flakes!
Notes
For extra depth, add a Parmesan rind while simmering and remove before serving. Swap kale for spinach and add at the end for quick wilting. To prevent soggy pasta in leftovers, cook tortellini separately if meal-prepping.
