Ingredients

  • ½ cup Italian dressing
  • ⅓ cup ranch dressing
  • 4 thinly sliced chicken breasts
  • 2 tablespoons vegetable oil
  • 4 ounces Provolone cheese, shredded or diced
  • ⅓ cup freshly grated Parmesan cheese
  • ⅓ cup ranch dressing
  • ½ cup panko bread crumbs
  • ¼ cup freshly grated Parmesan cheese
  • 1 ½ teaspoons garlic powder
  • 3 tablespoons salted butter, melted

Instructions

  1. In a large bowl, whisk together Italian dressing and ranch dressing.
  2. Add chicken breasts, ensuring they are well coated. Cover and marinate in the fridge for at least 30 minutes.
  3. In a medium bowl, mix Provolone cheese, Parmesan cheese, and ranch dressing.
  4. Microwave in 30-second intervals, stirring until melted and smooth.
  5. In a small bowl, combine panko bread crumbs, Parmesan cheese, garlic powder, and melted butter. Stir well.
  6. Preheat broiler on low and place the rack in the middle.
  7. Heat a large oven-safe skillet over medium heat, add vegetable oil, and cook chicken for 5 minutes per side until golden brown.
  8. Spread cheese sauce evenly over each piece of chicken.
  9. Sprinkle Parmesan crust mixture on top.
  10. Broil for 5-10 minutes until golden brown and crispy.
