  • 5 oz shortbread cookies (such as Lorna Doone)
  • 2 tbsp melted butter
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/3 cup sour cream
  • 2 large eggs
  • 2 tsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tbsp instant cheesecake pudding mix
  • 3 tbsp green sprinkles
  • 36 Mini Cadbury Eggs
  • 18 Mini Chocolate Bunnies (Lindt brand recommended)

Instructions

  1. Preheat oven to 350°F and line a cupcake tin with 18 liners.
  2. Pulse shortbread cookies in a food processor until fine crumbs form.
  3. Add melted butter to the crumbs, pulsing again until fully combined.
  4. Distribute 1 tbsp of crust mixture into each cupcake liner, pressing down firmly.
  5. In a large bowl, beat softened cream cheese and sugar until smooth.
  6. Add sour cream, eggs, lemon juice, and vanilla extract, mixing at low speed until silky smooth.
  7. Spoon about 3-4 tbsp of filling into each liner, leaving 1/4 inch of space.
  8. Bake at 350°F for 25 minutes until centers are set but slightly jiggly.
  9. Turn off the oven and cool for 1 hour with the door slightly open.
  10. Let cool to room temperature, then refrigerate for at least 2 hours.
  11. Beat heavy cream, powdered sugar, and pudding mix until stiff peaks form.
  12. Pipe a small dollop of whipped cream onto each cheesecake.
  13. Sprinkle green sprinkles over the top.
  14. Place two Mini Cadbury Eggs and a chocolate bunny on each cheesecake.

Notes
