Ingredients

  • 1 whole egg
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 cup granulated sugar (for coating)
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together butter and granulated sugar until light and fluffy.
  3. Mix in vanilla extract, egg, lemon zest, and lemon juice.
  4. In a separate bowl, whisk together flour, salt, baking powder, and baking soda.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Roll dough into 1-tablespoon balls.
  7. Roll each ball first in granulated sugar, then in powdered sugar.
  8. Place on the baking sheet, spacing 2 inches apart.
  9. Bake for 9-11 minutes or until edges are set.
  10. Let cool on the baking sheet for 3 minutes, then transfer to a wire rack.

Notes

Use fresh lemon juice and zest for the best flavor. For extra chewiness, avoid overbaking! Store in an airtight container for up to 4 days or freeze for up to 3 months.
