Description

A delicious and budget-friendly homemade version of Sweetgreen’s Hot Honey Chicken Plate, packed with protein, fiber, and nutrients.


Ingredients

  • 2 lbs chicken breast or thighs
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp kosher salt
  • 2 tsp chili powder
  • 1 tsp black pepper
  • ½ tsp cumin
  • ½ tsp coriander
  • ¼ tsp red pepper flakes
  • 1 lb sweet potatoes, cubed
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp nutritional yeast
  • ¼ cup olive oil
  • ¼ cup Dijon mustard
  • 2 tbsp honey
  • 2 tbsp apple cider vinegar
  • ½ tsp kosher salt
  • 1 tsp red pepper flakes
  • 4 cups red cabbage, shredded
  • 1 ½ cups shredded carrot
  • ¼ cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 2 tbsp apple cider vinegar
  • 1 tsp kosher salt
  • 1 tsp dried parsley
  • ¼ tsp black pepper
  • Juice of ½ lime
  • 1 ½ cups quinoa, rinsed
  • 3 cups vegetable or chicken broth

Instructions

  1. Marinate the chicken: Whisk together olive oil, balsamic vinegar, salt, and spices. Coat the chicken and marinate for 30 minutes to 2 hours.
  2. Roast the sweet potatoes: Preheat oven to 400°F. Toss cubed sweet potatoes with olive oil and spices. Roast for 25-30 minutes, flipping halfway.
  3. Cook the quinoa: Bring broth to a boil, add quinoa, reduce heat, and simmer for 15 minutes until water is absorbed. Fluff with a fork.
  4. Make the slaw: Combine cabbage and carrots with mayo, mustard, honey, vinegar, salt, parsley, pepper, and lime juice. Toss and refrigerate.
  5. Cook the chicken: Heat a grill or pan over medium-high heat. Cook for 6-8 minutes per side until internal temp reaches 165°F. Let rest and slice.
  6. Make the hot honey dressing: Whisk together all dressing ingredients. Adjust sweetness and heat to taste.
  7. Assemble: Add quinoa to a plate, top with chicken, sweet potatoes, and slaw. Drizzle with hot honey dressing and enjoy.

Notes

Store components separately in airtight containers for up to 5 days. Reheat chicken and sweet potatoes at 350°F for 10 minutes. Enjoy slaw chilled.
