- 2 lbs extra lean ground beef
- 1 small onion, diced
- 3 large garlic cloves, minced
- 1 (4 oz) can mild green chiles
- 1 cup salsa
- 1 cup tomato sauce
- 1 tbsp tomato paste
- 5 tbsp taco seasoning (homemade or store-bought)
Instructions
- In a large skillet, heat a drizzle of olive oil over medium-high heat.
- Add the ground beef, diced onions, and minced garlic, stirring frequently.
- Cook for 5-7 minutes or until the beef is fully browned and the onions are soft.
- Drain excess grease to prevent a greasy taco filling.
- Transfer the cooked beef mixture to the slow cooker.
- Pour in the salsa, tomato sauce, tomato paste, and green chiles.
- Sprinkle the taco seasoning evenly over the mixture.
- Stir everything together to ensure even distribution of flavors.
- Set the crockpot to LOW and cook for 6-8 hours, or on HIGH for 3-4 hours.
- Stir the mixture occasionally if possible to enhance the flavors.
- If the mixture becomes too thick, add a splash of beef broth or water.
- Give the taco meat a final stir before serving.
- Use a slotted spoon to scoop the meat into tacos, burritos, or bowls.
- Garnish with fresh cilantro, avocado slices, and shredded cheese.
Notes
For the juiciest meat, cook on low heat for the full 8 hours. If you like chunkier meat, break it up less while stirring. For extra depth of flavor, add a squeeze of fresh lime juice before serving.
