  • 2 lbs extra lean ground beef
  • 1 small onion, diced
  • 3 large garlic cloves, minced
  • 1 (4 oz) can mild green chiles
  • 1 cup salsa
  • 1 cup tomato sauce
  • 1 tbsp tomato paste
  • 5 tbsp taco seasoning (homemade or store-bought)

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium-high heat.
  2. Add the ground beef, diced onions, and minced garlic, stirring frequently.
  3. Cook for 5-7 minutes or until the beef is fully browned and the onions are soft.
  4. Drain excess grease to prevent a greasy taco filling.
  5. Transfer the cooked beef mixture to the slow cooker.
  6. Pour in the salsa, tomato sauce, tomato paste, and green chiles.
  7. Sprinkle the taco seasoning evenly over the mixture.
  8. Stir everything together to ensure even distribution of flavors.
  9. Set the crockpot to LOW and cook for 6-8 hours, or on HIGH for 3-4 hours.
  10. Stir the mixture occasionally if possible to enhance the flavors.
  11. If the mixture becomes too thick, add a splash of beef broth or water.
  12. Give the taco meat a final stir before serving.
  13. Use a slotted spoon to scoop the meat into tacos, burritos, or bowls.
  14. Garnish with fresh cilantro, avocado slices, and shredded cheese.

Notes

For the juiciest meat, cook on low heat for the full 8 hours. If you like chunkier meat, break it up less while stirring. For extra depth of flavor, add a squeeze of fresh lime juice before serving.
