Quick and easy, Garlic Parmesan Chicken and Potatoes is a one-skillet dinner loaded with flavor. Perfect for busy weeknights!

- 1 pound chicken tenderloins, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 2 tablespoons oil
- 1 ½ teaspoons paprika
- 1 ½ teaspoons poultry seasoning
- 1 teaspoon black pepper
- 2 tablespoons butter
- 2 garlic cloves, minced
- ½ cup garlic parmesan wing sauce
- 2 cups shredded mozzarella
Instructions
- Place chicken in a bowl and potatoes in another bowl.
- Add 1 tablespoon of oil to each bowl and toss.
- Mix paprika, poultry seasoning, and black pepper. Divide the mix between chicken and potatoes.
- Roast potatoes at 400°F for 20 minutes (air fryer or oven).
- Cook chicken in a skillet over medium-high heat until fully cooked (7–10 minutes).
- Add butter and garlic to the skillet; stir until fragrant.
- Toss in roasted potatoes and mix with garlic parmesan sauce.
- Top with shredded mozzarella, cover, and let the cheese melt.
- Serve immediately.
Notes
- Substitute chicken tenderloins with thighs or breasts.
- Baby potatoes can be replaced with diced Yukon Gold or red potatoes.
- Dairy-free alternatives are available for butter and cheese.
