  • 3 boneless, skinless chicken breasts, cut into bite-sized chunks
  • 2 bunches of asparagus, rinsed and trimmed
  • 1/2 cup butter, divided
  • 1 teaspoon olive oil
  • 2 teaspoons minced garlic, divided
  • 1 teaspoon Italian seasoning or Herbes de Provence
  • 1 tablespoon hot sauce (optional)
  • 1/2 cup low-sodium chicken broth
  • Juice of 1/2 lemon
  • 1 tablespoon minced parsley
  • Crushed red chili pepper flakes (optional)
  • Slices of lemon for garnish
  • 1 teaspoon salt
  • 1 teaspoon fresh cracked black pepper
  • 2 teaspoons onion powder

Instructions

  1. Slice chicken breasts into bite-sized chunks and season with salt, pepper, and onion powder.
  2. Wash and trim asparagus, blanch for 2 minutes, and plunge into ice water. Drain and set aside.
  3. Melt half the butter with olive oil in a skillet over medium heat. Stir-fry chicken until golden brown on all sides. Add 1 teaspoon garlic and Italian seasoning, cook for 1 minute. Remove chicken and set aside.
  4. In the same skillet, add remaining garlic and deglaze with chicken broth. Simmer and reduce by half. Add remaining butter, lemon juice, hot sauce, and parsley. Stir to combine.
  5. Add blanched asparagus and cook for 2 minutes. Return chicken to skillet and toss to coat in sauce. Garnish with parsley, chili flakes, and lemon slices. Serve hot.

Notes

To make the dish spicier, add more hot sauce or chili flakes. For a milder version, omit the hot sauce and use sweet paprika. You can substitute asparagus with green beans, broccoli, or zucchini.
