  • 1 (32 oz) bag frozen shredded hash browns, thawed
  • 2 cups sharp cheddar cheese, shredded
  • 1 1/2 cups sour cream
  • 1 (10.5 oz) can cream of chicken soup (or cream of mushroom for vegetarian)
  • 1 small white onion, finely diced
  • 8 tablespoons butter, melted (divided)
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 cups crushed cornflakes (or potato chips, Ritz crackers, or panko)

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine shredded cheddar cheese, sour cream, cream of chicken soup, diced onion, 4 tablespoons melted butter, garlic salt, onion powder, and black pepper.
  3. Fold in thawed and drained hash browns, mixing until evenly coated.
  4. Spread the mixture into the prepared baking dish and smooth the top.
  5. In a separate bowl, mix the remaining 4 tablespoons of melted butter with crushed cornflakes (or topping of choice).
  6. Sprinkle the topping evenly over the casserole.

Notes
