- 5 cups all-purpose flour
- ½ cup sugar + 2 tbsp for yeast
- 2 packages active dry yeast
- 1 teaspoon salt
- 1½ cups warm milk (120°F)
- ½ cup butter
- 2 eggs
- 1 cup raisins or currants
- Egg Wash:
- 1 egg
- 1 tbsp water
- The Icing:
- ¾ cup powdered sugar
- ½ tsp vanilla
- 1 tbsp milk
Instructions
- Prepare the Dough: Heat milk and butter over low heat until warm (120°F). In a small bowl, whisk yeast with 2 tbsp sugar, then add the warm milk mixture. Let proof for 5 minutes.
- Mix the Dough: In a stand mixer, combine 2 cups flour, remaining sugar, and salt. Slowly add the yeast mixture, then mix in the eggs. Gradually add remaining flour, ½ cup at a time, until a soft dough forms. Stir in raisins and knead for 5 minutes. Place dough in a greased bowl, cover, and let rise until doubled (about 1 hour).
- Form the Buns: Punch down the dough and divide into 16-18 pieces. Shape each piece into a ball and place on a baking sheet. Cover and let rise for another hour.
- Bake: Preheat oven to 350°F. Brush the buns with egg wash and bake for 20-25 minutes until golden brown.
- Add the Cross: Let buns cool completely. Mix powdered sugar, vanilla, and milk to create a glaze. Pipe a cross over each bun and let set.
Notes
Hot Cross Buns are best enjoyed fresh but can be stored in an airtight container for up to 3 days. Reheat slightly before serving for the best texture.
