- 1 tablespoon olive oil
- 1 ½ pounds lean ground beef or mix of lean and extra lean
- Salt & pepper to taste
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- ½ teaspoon dried oregano
- ½ cup beef broth
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 (14.5 oz) can chili beans
- 1 (14.5 oz) can diced tomatoes
- 1 (14.5 oz) can kidney beans, mashed
- ½ cup sweet corn
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef, season with salt & pepper, and cook until browned.
- Drain excess grease if needed, then transfer to your slow cooker.
- In the same skillet, sauté diced onion and garlic until softened, about 3 to 4 minutes.
- Stir in tomato paste, chili powder, paprika, cumin, and oregano. Cook for 30 seconds.
- Pour in beef broth, scraping up any browned bits from the pan. Transfer mixture to slow cooker.
- Stir in diced bell peppers, chili beans, diced tomatoes, and mashed kidney beans.
- Mix everything well, cover, and cook on LOW for 8 hours or HIGH for 4 hours.
- Stir in sweet corn and adjust seasoning in the last 15 minutes.
- Serve with your favorite toppings and enjoy!
