Description

Crockpot Tuscan Chicken is a creamy, flavorful dish featuring tender chicken breasts slow-cooked in a rich parmesan and sun-dried tomato sauce. This slow cooker chicken recipe is perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp Italian seasoning
  • 1 tsp onion powder
  • Salt & pepper, to taste
  • 3 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 2 cups baby spinach, chopped

Instructions

  1. Season the chicken breasts with Italian seasoning, onion powder, salt, and black pepper.
  2. Lightly spray the inside of the crockpot with nonstick cooking spray.
  3. In a mixing bowl, whisk together chicken broth, heavy cream, minced garlic, chopped sun-dried tomatoes, and grated parmesan cheese.
  4. Place the seasoned chicken breasts in the crockpot and pour the creamy Tuscan sauce over them.
  5. Cook on high for 3 hours or low for 5 hours.
  6. Five minutes before serving, add chopped baby spinach and stir gently. Let it wilt.
  7. Serve over pasta, rice, mashed potatoes, or low-carb alternatives.

Notes

For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir in 10 minutes before serving.
