Crockpot Tuscan Chicken is a creamy, flavorful dish featuring tender chicken breasts slow-cooked in a rich parmesan and sun-dried tomato sauce. This slow cooker chicken recipe is perfect for busy weeknights.

- 4 boneless, skinless chicken breasts
- 1 tbsp Italian seasoning
- 1 tsp onion powder
- Salt & pepper, to taste
- 3 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 2 cups baby spinach, chopped
Instructions
- Season the chicken breasts with Italian seasoning, onion powder, salt, and black pepper.
- Lightly spray the inside of the crockpot with nonstick cooking spray.
- In a mixing bowl, whisk together chicken broth, heavy cream, minced garlic, chopped sun-dried tomatoes, and grated parmesan cheese.
- Place the seasoned chicken breasts in the crockpot and pour the creamy Tuscan sauce over them.
- Cook on high for 3 hours or low for 5 hours.
- Five minutes before serving, add chopped baby spinach and stir gently. Let it wilt.
- Serve over pasta, rice, mashed potatoes, or low-carb alternatives.
Notes
For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir in 10 minutes before serving.
