Description

A comforting and nutritious slow cooker meal made with lean ground beef, hearty potatoes, and a medley of flavorful vegetables. This gluten-free and dairy-free soup is perfect for meal prep, freezing, and busy weeknights.


Ingredients

  • 1 lb lean ground beef (90-93%)
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 medium Yukon gold potatoes, chopped
  • 1 medium sweet potato, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 tbsp tomato paste
  • 4 cups low-sodium beef broth
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1 cup fresh green beans, chopped
  • 1 cup kale, chopped

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef, diced onion, green bell pepper, and minced garlic. Cook for 5-7 minutes, breaking up the beef, until browned. Drain excess grease if necessary.
  2. While the beef is cooking, chop potatoes, carrots, and celery into bite-sized pieces.
  3. Transfer the browned beef mixture to the slow cooker. Add chopped potatoes, carrots, celery, fire-roasted diced tomatoes, tomato paste, beef broth, Italian seasoning, salt, and black pepper. Stir to combine.
  4. Cover and cook on low heat for 8 hours or high heat for 4 hours.
  5. One hour before cooking time is up, stir in the chopped green beans and kale.
  6. Taste and adjust seasoning if needed before serving.
  7. Serve hot with crusty bread or a light salad. Optionally, garnish with Parmesan cheese, fresh herbs, or a drizzle of olive oil.

Notes

For a thicker soup, reduce broth by ½ cup or add an extra tablespoon of tomato paste. To make it dairy-free, avoid cheese toppings or use dairy-free alternatives.
