Instructions
- Heat oil in a skillet over medium-high heat.
- Season chicken breasts with salt and pepper.
- Sear chicken for 3-4 minutes per side until golden brown.
- Transfer seared chicken to the slow cooker.
- In a bowl, whisk together heavy cream, chicken broth, cornstarch, minced garlic, parsley, salt, and pepper.
- Pour the sauce over the chicken in the Crockpot.
- Cover and cook on LOW for 3 hours (or HIGH for 1.5-2 hours) until the chicken reaches 165°F.
- Serve with pasta, rice, or vegetables, spooning the creamy garlic sauce over the top.
Notes
For a dairy-free version, substitute heavy cream with full-fat coconut milk or cashew cream. Thicken the sauce with a cornstarch slurry if needed.
