- 2 pounds red potatoes (cut into 1-inch pieces)
- 2 tablespoons olive oil
- 1/2 cup grated parmesan cheese
- 3 garlic cloves, minced
- 1/2 teaspoon oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Chopped parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking sheet with non-stick cooking spray.
- In a large bowl, mix together the olive oil, parmesan cheese, garlic, and oregano. Toss the potatoes in this mixture until fully coated. Spread them in a single layer on your baking sheet. Sprinkle with salt and pepper.
- Bake for 30-35 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
- Remove from the oven and sprinkle with fresh chopped parsley. Serve immediately and enjoy.
Notes
For extra crispiness, soak potato pieces in cold water for 30 minutes before roasting. Spread them in a single layer on the baking sheet to ensure even crisping.
