Description

A comforting and hearty Shepherd’s Pie topped with creamy, cheesy mashed potatoes, perfect for family dinners or special occasions.


Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped yellow onion
  • 1 lb. 90% lean ground beef or ground lamb
  • 2 teaspoons dried parsley leaves
  • 1 teaspoon dried rosemary leaves
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon Worcestershire sauce
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 cup frozen mixed peas and carrots
  • 1/2 cup frozen corn kernels
  • 1 ½2 lb. russet potatoes, peeled and cut into 1-inch cubes
  • 8 tablespoons unsalted butter
  • 1/3 cup half & half
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/4 cup parmesan cheese

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onions and cook for about 5 minutes, stirring occasionally.
  2. Add the ground beef (or lamb) and break it apart with a spoon. Stir in parsley, rosemary, thyme, salt, and pepper. Cook for 6-8 minutes until browned.
  3. Add Worcestershire sauce and minced garlic. Cook for 1 minute.
  4. Stir in flour and tomato paste until well combined.
  5. Pour in beef broth, add peas, carrots, and corn. Bring to a boil, then reduce to simmer for 5 minutes. Set aside.
  6. Boil the potatoes in a large pot for 10-15 minutes until fork-tender.
  7. Drain and let the potatoes sit for a minute to dry.
  8. Mash potatoes with butter, half & half, garlic powder, salt, pepper, and parmesan cheese.
  9. Preheat oven to 400°F.
  10. Spread the meat mixture in a 9×9-inch baking dish. Top with mashed potatoes.
  11. Bake uncovered for 25-30 minutes until golden on top.
  12. Let it cool for 15 minutes before serving.

Notes

For a crispy, golden top, brush melted butter on the potatoes before baking and broil for the last 3-5 minutes.
