Description

Soft-baked, chewy, and filled with extra vanilla, these cookies pair sweet white chocolate morsels with tart dried cranberries for a classic treat.


Ingredients

  • 3/4 cup (12 Tbsp) unsalted butter, softened
  • 3/4 cup packed light or dark brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour (spooned & leveled)
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup white chocolate chips, plus extra for garnish
  • 1 cup dried cranberries, plus extra for garnish

Instructions

  1. In a large bowl, beat the butter, brown sugar, and granulated sugar on medium speed until creamy (about 2 minutes). Add the egg and vanilla, then mix well.
  2. In another bowl, whisk together flour, cornstarch, baking soda, and salt.
  3. Slowly add dry ingredients to wet ingredients, mixing on low speed.
  4. Fold in white chocolate chips and dried cranberries.
  5. Cover and chill the dough for at least 1 hour (prevents spreading!).
  6. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
  7. Roll dough into balls (about 1.5 Tablespoons each) and place 3 inches apart.
  8. Bake for 11-12 minutes, until edges are slightly golden.
  9. Let cookies rest for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chilling the dough prevents excessive spreading and intensifies flavors. Use a cookie scoop for uniform cookies and don’t overbake for the softest texture.
