Description
Soft-baked, chewy, and filled with extra vanilla, these cookies pair sweet white chocolate morsels with tart dried cranberries for a classic treat.

- 3/4 cup (12 Tbsp) unsalted butter, softened
- 3/4 cup packed light or dark brown sugar
- 1/4 cup granulated sugar
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 2 cups all-purpose flour (spooned & leveled)
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup white chocolate chips, plus extra for garnish
- 1 cup dried cranberries, plus extra for garnish
Instructions
- In a large bowl, beat the butter, brown sugar, and granulated sugar on medium speed until creamy (about 2 minutes). Add the egg and vanilla, then mix well.
- In another bowl, whisk together flour, cornstarch, baking soda, and salt.
- Slowly add dry ingredients to wet ingredients, mixing on low speed.
- Fold in white chocolate chips and dried cranberries.
- Cover and chill the dough for at least 1 hour (prevents spreading!).
- Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
- Roll dough into balls (about 1.5 Tablespoons each) and place 3 inches apart.
- Bake for 11-12 minutes, until edges are slightly golden.
- Let cookies rest for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Chilling the dough prevents excessive spreading and intensifies flavors. Use a cookie scoop for uniform cookies and don’t overbake for the softest texture.
