Ingredients

  • 1 cup butter, melted and slightly cooled
  • 2 ½ cups granulated sugar
  • 1 tbsp vanilla extract
  • 4 large eggs
  • 1 ½ cups whole wheat or all-purpose flour
  • 1 cup cocoa powder
  • ½ tsp salt

Cheesecake Layer:

  • 8 oz cream cheese, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ⅓ cup granulated sugar

Topping:

  • ½ can cherry pie filling

Instructions

  • Line a 9×13-inch baking pan with foil and spray with cooking spray. Preheat oven to 350°F (175°C).
  • In a large bowl, whisk melted butter and sugar until smooth. Add vanilla and eggs, mixing well. Stir in flour, cocoa, and salt until combined. Batter will be thick.
  • Spread half the brownie batter into the prepared pan.
  • In another bowl, beat cream cheese, egg, vanilla, and sugar until smooth. Spread over the brownie batter.
  • Spoon cherry pie filling on top, swirling gently with a knife. Drop remaining brownie batter by spoonfuls over the top and smooth out as best as possible.
  • Bake for 30–35 minutes, or until the center is just set. Let cool completely before slicing. Refrigerate for cleaner cuts.

Notes

  • Substitute whole wheat flour with all-purpose flour if preferred.
  • Use light cream cheese and reduced-sugar cherry pie filling for a lighter option.
