- 1 cup butter, melted and slightly cooled
- 2 ½ cups granulated sugar
- 1 tbsp vanilla extract
- 4 large eggs
- 1 ½ cups whole wheat or all-purpose flour
- 1 cup cocoa powder
- ½ tsp salt
Cheesecake Layer:
- 8 oz cream cheese, softened
- 1 large egg
- 1 tsp vanilla extract
- ⅓ cup granulated sugar
Topping:
- ½ can cherry pie filling
Instructions
- Line a 9×13-inch baking pan with foil and spray with cooking spray. Preheat oven to 350°F (175°C).
- In a large bowl, whisk melted butter and sugar until smooth. Add vanilla and eggs, mixing well. Stir in flour, cocoa, and salt until combined. Batter will be thick.
- Spread half the brownie batter into the prepared pan.
- In another bowl, beat cream cheese, egg, vanilla, and sugar until smooth. Spread over the brownie batter.
- Spoon cherry pie filling on top, swirling gently with a knife. Drop remaining brownie batter by spoonfuls over the top and smooth out as best as possible.
- Bake for 30–35 minutes, or until the center is just set. Let cool completely before slicing. Refrigerate for cleaner cuts.
Notes
- Substitute whole wheat flour with all-purpose flour if preferred.
- Use light cream cheese and reduced-sugar cherry pie filling for a lighter option.
- Store in an airtight container in the refrigerator for up to 5 days.
