- 1 pound fresh green beans (ends trimmed and washed)
- 1 tablespoon olive oil (or coconut oil)
- 1 teaspoon onion powder (optional)
- 1 tablespoon minced garlic (or 1 teaspoon garlic powder)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup shredded parmesan cheese (freshly grated preferred)
- 1 1/2 cups shredded mozzarella cheese
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Wash and trim the fresh green beans, then pat them dry.
- In a large mixing bowl, toss the green beans with olive oil, onion powder, garlic, salt, black pepper, and shredded parmesan cheese.
- Spread the seasoned green beans in a single layer on the baking sheet.
- Bake for 20 minutes, tossing halfway through for even roasting.
- Remove from the oven and sprinkle with shredded mozzarella cheese.
- Turn the oven to broil and return the green beans for 4-5 minutes until the cheese is golden and bubbly.
- Let cool for a couple of minutes, then serve hot.
Notes
For the best texture, avoid overcrowding the pan. Use fresh green beans for optimal crispiness.
