Description

These Brown Sugar ‘Pop-Tart’ Cookies are a nostalgic, homemade take on the classic breakfast pastry! Featuring a rich, buttery cookie base, a warm cinnamon filling, and a simple icing glaze, they bring all the cozy flavors of brown sugar pop-tarts into a decadent cookie form.


Ingredients

  • 2 1/2 cups gluten-free 1:1 flour (or all-purpose flour)
  • 3/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon kosher salt
  • 1 1/2 sticks unsalted butter, softened
  • 1/4 cup coconut oil (room temperature)
  • 1 tablespoon maple syrup
  • 1 1/2 cups dark brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg + 1 egg yolk
  • For the Cinnamon Filling:
  • 1/4 cup dark brown sugar
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon ground cinnamon
  • For the Icing Glaze:
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons almond milk (or whole milk)

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a medium mixing bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt. Set aside.
  3. In a stand mixer, cream butter, coconut oil, maple syrup, and brown sugar until fluffy.
  4. Add vanilla, egg, and egg yolk, mixing until combined.
  5. Gradually add dry ingredients, mixing on low until just combined.
  6. In a small bowl, mix brown sugar, butter, and cinnamon until smooth.
  7. Scoop 20 tablespoon-sized dough balls onto the prepared baking sheet.
  8. Top each dough ball with 1/2 teaspoon of cinnamon filling.
  9. Scoop another 20 dough balls and place them on top, pressing gently to seal.
  10. Transfer to freezer and chill for at least 1 hour (or overnight).
  11. Preheat oven to 350°F.
  12. Bake cookies for 12-14 minutes, rotating halfway through.
  13. Remove from oven and tap the pan on the counter for a slightly flatter, chewier cookie.
  14. In a bowl, whisk together powdered sugar, cinnamon, salt, and almond milk until smooth.
  15. Once cookies are completely cool, spoon about 2 teaspoons of icing onto each.
  16. Allow to set before storing or serving.

Notes

Freezing the cookie dough before baking helps the cookies hold their shape and prevents the cinnamon filling from oozing out.
